Antioxidants in Raisins

Antioxidants are protective substances naturally found in concentrated amounts in fruit, vegetables and grains.

They may help protect healthy cells from free radicals (unstable oxygen molecules formed in the body when cells use oxygen to produce energy), that may lead to health problems like heart disease, cancer and other ills of aging.

1-When and where did raisins originate?
Raisins were probably "discovered" by ancient man the first time he found them dried on the vine. The Phoenicians planted vineyards around Malaga and Valencia (Spain) and in Corinth (Greece), between 120 and 900 B.C. Around the same time, the Armenians were starting their vineyards in Persia.

3-What is the best way to store raisins?
Cool storage is the best way to keep raisins. After the package has been opened they should be put in a sealed container and refrigerated. Raisins will retain their flavor, color, and nutritive value if stored in the refrigerator. They can be kept even longer if frozen. Raisins will thaw quickly at room temperature. If raisins become dry due to improper storage, rinse them in tap water to dissolve the sugar crystals and restore the moisture.

A golden to bright yellow raisin is mechanically dried and treated with sulfur dioxide to retain color and a green raisin is dried by air in adobe houses.
